About Me

Dr. Beatty is an Assistant Professor of Nutrition at Simmons University in Boston, MA. Before joining the Simmons Nutrition faculty, Dr. Beatty completed her postdoctoral work at the University of Rhode Island before going on to become an Assistant Professor of Health Science and the Health Science Internship Director at Stonehill College. Dr. Beatty has worked in the nutrition field as a clinical dietitian for both adults and pediatrics, specializing in nutrition support and eating disorders, and has also worked as a consultant dietitian for long-term care.

At home, Dr. Beatty is a proud mother of four, with two sons in college and two daughters in high school. She loves to listen to her sons' music performances in Boston and enjoys supporting her daughters in their love of dance.

Dr. Beatty has gained experience throughout her career in various areas including clinical nutrition, eating disorders, sports nutrition, and chronic disease prevention through lifestyle health behaviors.

Research/Special Projects

Dr. Beatty has recently examined nutrition and physical activity habits in college students during the COVID-19 pandemic. She is currently in the process of launching a new research agenda which will investigate the presence of eating disorder triggers for students in nutrition and dietetics education. Dr. Beatty is also interested in studying biomarkers of chronic disease and body composition of individuals with reduced physical activity and various barriers to health and wellness.
